Tiramisu (with cooked cream)



I had a good recipe for Tiramisu but it was from times when it was safe to eat raw eggs. Recently I found this one, with cooked cream, and I bet you can't taste the difference. It is from Allrecipes.com (with my twist) and my daughter asked me to put it here.


Ingredients:
6 egg yolks
1 1/4 cup white sugar
1 1/4 cup mascarpone cheese
1 3/4 cup whipping cream
12-14oz (340g-400g) ladyfingers
2 cups of strong instant coffee (or any other unsweetened coffee)
1tsp or more cocoa powder for dusting




Combine egg yolks and sugar in the top of a double boiler, over boiling water. Reduce heat to low, and cook for about 10 minutes, stirring constantly. Remove from heat and whip yolks until thick and lemon colored.

Add mascarpone to whipped yolks. Beat until combined. In a separate bowl, whip cream to stiff peaks. Gently fold into yolk mixture and set aside.

Pour coffee into wide bowl. Put little bit of cream on the bottom of glass dish with sides. Dip each ladyfinger quickly into the coffee and line the bottom of the dish. Cover with one third of cream, repeat with ladyfingers, then put second third of the cream and then last layer of coffee dipped ladyfingers and cream. On top, dust with unsweetened cocoa powder. Leave in the fridge for several hours before serving.
