This dish can be made with only mushrooms (no greens) or with only one kind of mushrooms.
Ingredients:
1 bunch greens (swiss chard, kale, spinach...)
2 portabella mushrooms
about 2 handfuls or more shitake mushrooms
button mushrooms as much as you like
1 inch ginger
1 cooking onion
2 cloves garlic
1/2 cup or less chicken stock or chicken soup cube (if you want vegetarian dish, add vegetable broth)
salt
black pepper
oil
Clean the greens and remove hard stems (even the parts of stems that are on the leaves). You can quickly boil the greens or just cut them up and leave aside. Clean mushrooms (wipe them with a dump cloth, white/button mushrooms can be peeled), cut them up and leave them aside.
In a pan add oil, diced onion and garlic, and finely grated ginger. Stir fry for a bit, until onion becomes soft. Add little bit of water if needed, you don't want it to burn.
Now add the rest of the ingredients, cut up greens, mushrooms, stock or cube (if you are adding a cube then add some water too). Don't add too much water or stock because mushrooms have lots of water in them and it will come out during the cooking.
Cook it until almost all liquid is gone.
Serve it as a main meal or as a side dish.
